A Butter chicken recipe is usually made within Indian communities, but has become well known and made all over the world. Its uniqueness and flavor emanates from the different spices used. These spices are better bought at Indian shops. The preparation is simple. The key in getting the right flavor is using the right amount of spices. The sauce should be a creamy tomato curry. You could vary how hot it is by the amount of cayenne pepper you use. This Indian Cuisine is excellent for those who like a nice thick delicious gravy to have with chicken.

Ingredients
- 2 lbs of boneless chicken cut in small pieces
- 2 cup of onion
- 1 stick of butter
- 2 tsp of lemon juice
- 1 cup tomato puree
- 1 tsp of cayenne pepper
- Pinch of salt
- Pinch of black pepper
- 1 cup yogurt.
- 1 cup of cashews
Spices needed
- 1 tsp ginger crushed
- 1 tsp garlic crushed
- 1 tsp garam masala
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp of cinnamon
Instructions
Wash chicken thoroughly. Remove the skin and cut in small cubes. Season with salt and black pepper. Pour oil in frying pan and place on stove. When the oil is hot, fry the chicken for five minutes until all sides are slightly brown. Remove chicken from frying pan and place in tray.
Add butter to frying pan and then put in onions and cinnamon. Wash and crush ginger. Put in crushed garlic and ginger. Stir thoroughly. Add all other spices, that is, the garam masala, ground cumin, cayenne pepper and fry to release the natural flavors .The cayenne pepper should be added to taste .Add the rest of the ingredients and seasonings, that is, the lime juice, tomato puree, and 1 cup of yogurt. Cook by stirring using low heat and then add the fried chicken cubes .The yogurt and butter ingredients will give the sauce its creamy component.
Ensure that the chicken is thoroughly mixed with the sauce made. Continue stirring until the gravy is at the required consistency. Simmer for at least twenty five minutes until most of the liquid has dried out. Add one cup of cashew. This will garnish your butter chicken and also thicken your gravy.
Serve warm with long grain boiled rice.
Tips and Warnings
For those persons with large families that require a bigger meal, you could use a whole chicken in your butter chicken recipe. Cut into small pieces and fry for a longer period. Make tunnels into chicken so that it will absorb the spices and cook into sauce until all the water has been evaporated.
A good way to have all the spices and seasonings mixed thoroughly is to use a blender to make the butter chicken sauce.
Alternatively you could have also marinated the chicken overnight. Bake it. Then add to the sauce.
